There’s something uniquely comforting about baking a traditional dessert that brings a piece of your homeland into your kitchen. For me, this Finnish Blueberry Tart, known as Mustikkapiirakka, is that special treat.
Whether I’m longing for the familiar taste of my beloved Finland or wanting to spoil my children with something delicious and traditional, this tart never fails to deliver.
Ingredients for Finnish Blueberry Tart
For the pastry
200g butter, softened
1 cup sugar OR 1/2 cup xylitol
1 tsp salt
1 egg
2.5 cups cake flour
For the Filling
500g fresh or frozen blueberries
2 TBS corn flour
400g sour cream
Juice of one lemon
1/2 cup sugar
2 tsp vanilla essence
4 eggs
How to Make Finnish Blueberry Tart
Step 1: Prepare the Pastry
- Cream the butter and sugar until well blended.
- Add the salt and egg, mixing thoroughly.
- Gradually add the flour and mix until smooth. Be careful not to overmix.
- Press the pastry into a quiche or tart flan and place in the freezer for at least 30 minutes.
Step 2: Prepare the Filling
- Preheat the oven to 180°C (350°F).
- Coat the blueberries with corn flour and place them at the base of the lined tart flan.
- In an electric mixer, cream the sour cream, lemon juice, sugar, and vanilla essence.
- Add in the eggs one by one, ensuring each is well incorporated.
- Pour the mixture over the blueberries, ensuring they are evenly covered.
Step 3: Bake the Tart
- Bake for 30-45 minutes, until the center of the filling feels firm.
- Allow the tart to cool slightly before serving.
Serving Suggestions
This Mustikkapiirakka tastes irresistible straight out of the oven but also keeps well in the fridge for a couple of days.
For an elegant touch at weddings and formal functions, I love to bake this tart in small individual molds and serve it with homemade lemon curd ice cream and almond praline.
